Prune Drying in California
This is a typical scene in the California prune district. In the foreground are seen piles of racks not at present in use. In the background the racks, covered with prunes, are laid out on the ground while the fruit dries in the sun. Before drying, the fruit is sterilized and the skin properly cracked by dipping in a lye bath.
