Doubtless many people who eat the artichoke fail to realize they are consuming a flowerbud. But such is really the case. If the head with its many succulent bracts had been allowed to come to maturity, it would have been a composite flower, like the one shown here. But for use on the table, the bud must be plucked before it opens.
